Applejack and Twilight both have feelings for eachother, but both hide it in fear. When Twilight's first attempted kidnapping gives Applejack the time to confess, Twilight's shock and her paralyzed body betray her, and she accidentally says

As Applejack follows Pinkie Pie, who's so secretively planning a party that she forgoes conventional methods, even being so clever as to not buy anything Applejack might ask about, Applejack runs for the hills when Pinkie's tail starts twitching.
