Some days, life hands you interesting things.
You might wake up one morning, get out the right side of the bed, and life hands you pleasant surprises. The newspaper lands right on your doorstep, your coffee goes down smooth and easy, breakfast isn’t burned. The clothes you put on to go to work fit you just right, and the weather outside is delightfully pleasant. Conversely, you might also wake up one morning and fall completely off course from the bed, stubbing your hoof and limping into the bathroom only to scramble through brushing your teeth and trying to put on your work clothes one hoof-ed because you overslept. Never mind your grumbling stomach wanting food, you had customers waiting for their sugar fix.
Pony Joe felt life really needed to check it’s grip on the stack of handouts before getting to him. It might explain why, as he was closing up shop, he was greeted by two royal guards who handed him a scroll embellished with Luna’s royal seal. They let him read the contents of it as they escorted him to the castle. It was written in a mix of regular modern Ponish and some occasional older Ponish, leaving him a little confused. Neither of the guards had much to offer on the matter, other than to just nudge him through security checkpoints and escort him through the castle until they finally arrived in the kitchens.
The royal kitchens were an admittedly larger room than Joe had anticipated. The small setup he had back in his shop was almost miniscule compared to all the equipment they had available. There must’ve been ten different ovens, each a different size and purpose no doubt. The shelves above the ovens lined two walls, containing what Joe expected to be the various ingredients the royal chefs used when cooking for the Royal Sisters. Contrary to public gossip though, he didn’t see piles of bananas and cakes for Celestia at the ready; in fact, the only thing that seemed present was a small bowl of fruit on a nearby station for ponies to partake in. Ponies like Princess Luna who was standing there and waiting.
“I thank thee, my guards. You may go. And welcome, Chef Joe!” Luna greeted him as the guards bowed their heads and departed, leaving Joe alone with the Princess. He shuffled in place for a moment, finally reaching up to clutch at his folded hat and bowing his head to the Lunar Princess.
“T-thank you, uh, thee, your majesty?” He attempted. She gave a small laugh, waving her hoof at Joe’s bowed form.
“Rise and be at ease, my fellow pony. For today, you may just address me as Luna. I take it thou read my missive?”
“I uh, yes. I think I understand it.” He replied. “I’m not that versed in the old tongue, though. You needed help with a baking problem?”
“In a manner of speaking.” Luna replied, finishing the bite of her apple she’d been chewing on before tossing it into a nearby waste bin. “My sister and I are clearly ponies of varying talents. She raises the sun, I the moon and stars. She looks after the waking world, and I attend to the dreamers of the night. But there are some things we share, such as a fondness for sweets.”
“Nothing wrong with that.” Joe declared, affixing his hat back atop his head as he listened. “Heck, that's the drive of my whole business. A hungry pony coming my way is usually one that hankers for dessert.”
“Indeed, and thou are a very talented creator of sweets. Or so I hear, at the least, if the rumors on the lips of stallions and mares speak truth. But I digress; my sister and I possess many different talents. And one that my elder sister possesses is a prowess in the kitchen that I have had...difficulty in replicating.” Luna finished, giving one of the ovens a sidelong glance that seemed to Joe an almost challenging stare.
“If her majesty doesn’t mind my asking,” Joe replied, “exactly how difficult is it for you?”
“I’ve been told the Canterlot Fire Department has developed a special task force to deal with the likes of my...attempted creations.” Luna replied, looking back at Joe. “It is hardly my fault they cannot appreciate a blend of fish, gelatin, and salad!”
Joe allowed his mind to try and comprehend such a creation before politely asking it to leave his imagination. “Right. Well. Maybe we should make something easy to start you off?” He suggested.
Luna clapped her hooves together. “Delightful! I would enjoy providing something my sister would like. And all of my guards spoke of how good your desserts are. So you would be the best instructor, I imagine. Perhaps we could make a new recipe forged from unused ingredients?”
Joe bit down the knee-jerk response of telling the Lunar Princess to not desecrate his donut recipes with her creative imagination. “Maybe in the future, but it’s important to get the fundamentals down first. And since you’re starting off easy, let’s cook something easy.” He suggested. “Now, I might be known as ‘Donut Joe’, but I also make other desserts. There’s eclairs, there’s pies, even the occasional cake or two.”
Luna adopted a thinking pose for a moment, leaving Joe to wait until she nodded and smiled at him. “Then let us start from the start. Teach us thine noble Donut ways, master Joe.”
“Master. Heh.” He chuckled at Luna’s declaration. “Alright, Luna, first we need the ingredients for the batter to make the dough. We’re gonna need an egg, some yeast, milk,” he listed off the ingredients and watched as Luna summoned each one on command from a nearby storage container or fridge, all of them levitating into a neat pile next to a bowl she procured at his instruction. “We’ll need to heat the milk a little, and once it’s warm enough, we’ll add the yeast.”
Luna nodded, and Joe looked away for a moment to measure out the vanilla, salt, and sugar. When he looked back to the Lunar Princess, he almost dropped his packet of sugar. Luna had borrowed a torch from one of the walls and was holding the flammable end beneath the jug of milk. She saw him looking and smiled happily.
“It is like this, correct? To warm the milk?”
“...You’ve got the spirit, I’ll say that much.” Joe commented before plucking the torch out of her magical grasp with his own. “But we don’t need to heat the entire jug. Just measure some out onto the saucepan there, and let the stove heat the milk for us.”
She obeyed the instruction, but as she poured out the milk and set it up on the burner, she voiced a question. “Is it not the goal of cooking in your industry to try and be as quick as possible, Joe?”
“Quick at making food, yes. Quick to burn the food, no.” He replied as he worked at whisking the butter, egg, and vanilla. The familiar scent of the blended items wafted up to him, a smell that made him feel more at ease given the circumstances. “Some things you have to work up and let it build naturally. Magic is a good tool in the kitchen,” he nodded at the bowl where his magic was continuing to whisk the ingredients together, “but some things need to be done personally.”
“I see. Is this the ‘personal touch’ to cooking I hear talk of?”
“It is. You can do a lot of things in the kitchen with magic, but saying that you made it yourself and not just casting a spell feels...I dunno how to really say it. More fulfilling maybe?” He replied.
Luna pondered on this as she observed the milk starting to steam. At Joe’s beckon, she lifted the saucepan up and brought it to him, letting him place the yeast in it. “Is that maybe why sister does so well with it? I always thought she could just put it all together so effortlessly through her magic.”
“Well. I don’t know your sister personally,” Joe stated, “but a good chef knows how to make the most with what’s in their hooves. Ah! See here,” he tilted her mixture into the bowl where his ingredients were resting, the ingredients melding together and shifting as he moved the bowl slightly until they were all mixed evenly, “now here’s a perfect example. We have to prep the dough for baking. Now some ponies like to use either tools or magic to do it, but I prefer doing it by hoof. And by me, this time, I mean you.”
Luna blinked. “How does one prepare dough with their bare hooves?”
“Easy. We’re going to knead it, rough it up a bit to help make sure everything is mixed and the dough is stable.” He informed her. “Now, do you want me to show you an example?”
Seeing her nod, he smiled and took hold of the bowl, making sure it was settled on the counter before squishing his hoof into the dough. The soft mixture easily moved from his effort, and he began to push and move his hoof through the dough as Luna looked on. Joe scooted a little, but Luna moved herself close beside him. The stallion took a moment to just observe as Luna used both hooves and worked at the dough. To an outside observer, they might think she was doing just fine, but Joe’s trained eyes saw she was working it too hard, too rough. Patches would come apart, making odd lumps amidst the dough. “Luna, here, hold on,” He said before moving closer and resting his hooves on top of hers. The act did make Luna stop, and she glanced at him on her left. “You gotta go easy on it. Which can take up to...well, an hour and a half.”

“Yes?”
“Joe, you instructed me before that magic was not to be used to make such foods. And so far we have been physical as instructed.”

“But is there a rule about using magic around the food? Say, perhaps, just a sprinkle of time magic?”
The stallion paused and considered this. Technically speaking, she had a point. And he was curious just what the alicorn had in mind. “Well, no, there isn’t. What were you thinking about doing?”
“Observe.” She sat up and concentrated, her horn glowing brightly before a dark blue orb encompassed the bowl of dough. He could vaguely make out the shape of the bowl past the magic, but stayed put to observe as Luna’s magic swirled around the dough. It was strong enough to kick up some wind, ruffling some of the utensils nearby and shaking the cabinet doors. It was only for a few moments though before she relented, and her magic faded away.
As the blue glow diminished, Joe saw the dough had indeed risen just like he knew it was supposed to do. Only it had happened in the span of seconds and not an hour and a half. He stepped closer to inspect the dough, and found no blemishes or discoloration. It looked every bit the prime material ready to be made into donuts.
“...I had no idea you could do that.” Joe remarked, looking at the Lunar Princess. The mare in question lifted her head and puffed out her chest in pride.
“Tis but a little time magic. Certainly nothing to harm our reality. Some would object, but since I and my sister gave ponies the concept of time, I feel I stand in place as an authority.”
“So what you’re saying is...you’re the reason I glare at my alarm clock in the morning.”
“Nay. My contribution is the snooze button.”
Joe laughed at that, and Luna followed suit as well, her wings giving a light flap at her sides.
“Alright, alright. The Pretty Princess of the Moon and Time still has donuts to finish up.” Joe said, making Luna giggle as he fetched the next set of tools and laid out a metal pan sheet on the counter. “So, the dough is now ready to be used. What do you suppose is our next step?”
Luna gazed at the dough for a moment before looking at him. “This is soft and doughy. It must be heated to become firm. Only then will it be fit to enter my mouth.”

Luna listened as instructed and followed his lead, allowing Joe to show her how to cut the dough into precise donut-like shapes.
