Twilight was born and raised unicorn, and wasn't shocked when she was taken under Celestia's literal wing. But why? Why would the Princess of Equestria take a lowly unicorn under her wing, raise her to her maximum powers (which far exceed those of any other unicorn) and let her live in the Castle?

Because Twilight may have been born unicorn, and probably would have stayed unicorn. If one little… mishap, or perhaps blessing, hadn't occurred.
