Q:Will Alduin be the only adversary in this story? What other instances of Skyrim will turn up? And who will Galar fall in love with?

A:No. I will add other foes. The Greybeards, and Ulfric maybe. Well.... Rarity.

Q:Will he have access to all the shouts including DLC? Is the Dragonborn DLC also included in the events that Galar has gone through? What about Hearthfire? And the Dawnguard DLC as well? Is Galar married in the 'playthrough'? Will he learn new shouts themed to the show? Will there be any Dragons besides Spike and Alduin?

A:No. I'm afraid I haven't gotten to those yet. No he's not married. Yes he'll learn shouts themed to the show. And yes, expect a lot of Dragons.
